Skirt steak with charred broccolini

360g skirt steak
Sea salt and black pepper
1 tablespoon grass fed ghee, plus extra to serve
1 bunch broccolini
Pinch of dried chilli flakes (optional)
Squeeze of lemon juice
Season the steak generously on both sides with salt and pepper.
Heat a large grill or frying pan over a high heat. When hot, add the ghee. Add the steak and cook for 2 – 3 minutes on each
side for medium-rare (depending on how thick it is), or until done to your liking. Transfer to a plate to rest. Keep the frying
pan on a medium heat.
Meanwhile, steam or boil the broccolini until almost cooked, then drain. Add the broccolini to the pan along with the chilli
flakes, and toss, until the broccolini is cooked. Squeeze over some lemon juice.
Serve with some extra ghee if desired.
